Strawberry Lime Breakfast Bread

Everyone tells you that you to never skip breakfast. And I wholeheartedly agree. Mostly because I absolutely love breakfast foods and can’t imagine a morning without my daily Greek yogurt or peanut butter on toast.  But not everyone wakes up planning their first meal of the day. Some are fine with just a cup of coffee until lunchtime. In fact, my dad is one of those people. With the exception of Sunday morning which often include glazed donut holes or strawberry cream cheese coffee cake, my dad most often starts his day breakfast free. But my mom has told me if there is a muffin or breakfast bread lying around, he may take a snack along with him before heading out the door. And since I’m strong believer in the “breakfast as the most important meal of the day” idea I thought I would make a healthy breakfast bread for one of my favorite guys. This bread contains whole wheat flour and nutrient rich Greek yogurt, so it is the perfect snack to get you going in the morning. And seeing as butter and oil are absent from this ingredient list, the calorie count is just under 100 calories per slice. I added fresh strawberries & lime zest to sweeten the bread, and make it slightly reminiscent of that not so healthy strawberry cream cheese coffee cake my dad loves so much. So after years of my dad making sure I ate my vegetables, drank my milk, and kept an open mind about new foods, I’m going to try to make sure he starts eating his breakfast. Even if it isn’t dripping in sugary glaze. Love ya, Pa!

Ingredients: Makes 12 servings

  • 1 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup Oikos Strawberry Greek Yogurt
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 cup skim milk
  • 2/3 cup finely diced fresh strawberries
  • zest from 1 lime

Preparation

  1. In a large bowl, sift flour, salt & baking powder together, set aside
  2. In a medium bowl, whisk yogurt, egg, vanilla extract & milk together
  3. Pour wet ingredients into dry ingredients and stir until just combined
  4. Fold diced strawberries and lime zest into batter
  5. Pour batter into a greased loaf pan and bake at 350 for 40 minutes, or until a toothpick inserted in the center of the loaf comes out clean
