Chocolate Cherry “Larabar Bites”

There was a time in my life that I literally did not have time to eat. It was terrible. Well not entirely. I was so busy because I was working as a culinary intern for a private resort, and my 12-14 hour days were spent pumping out chocolate lava cakes and grilled caeser salads like it was my job. Because…well, it was. And seeing as a had very little time to grab something to eat, I grew to love the conveience and nutritional profile of protein bars. By no means the healthiest diet…but my large supply of Cliff Bars, Luna Bars & Special K Bars got me through my long and tiring days in the kitchen. But after 4 months of eating almost nothing but these “health bars.” I got incredibly sick of them. For years I glared at those Special K protein bars from the grocery store aisles. And while I don’t see myself picking up another box of those meal replacers any time soon, I have been drawn to the idea of making my own version of one of these nutrition packed snacks. I’ve been hearing a lot about how great Larabars are and how few ingredients they contain. Larabars mainly consist of dried dates, cashews and different dried fruits & spices for added flavor. So I decided to make a little version of my own using pitted prunes, almonds, cherries and chocolate. Because chocolate makes the world go round.  At least I think so. These little nutrition packed “bites” taste like black forest cake due to the rich cocoa and tart cherries, but can serve as the perfect healthy snack. Lately I’ve found them to be a great snack to have pre or post run. Enjoy!

Ingredients: Makes 12 “bites”

  • 1 cup pitted prunes
  • 3/4 cup raw almonds
  • 1 teaspoon vanilla
  • 2 tablespoons dried cranberries
  • 3 tablespoons cocoa powder
  • 1 tablespoon sugar

Preparation:

  1. Place all ingredients in a food processor and blend until smooth and no chunks of almonds remain (about 4-5 minutes)
  2. Remove batter from food processor and roll into 1 inch balls. SPraying your hands ith cooking spray beforehand will keep the batter from sticking to your hands
  3. Enjoy!
