Cookie Dough Cupcakes

Today is my last day at my first full time job. It was a post college internship that turned into a full time position that eventually served as the stepping stone in getting my 2nd full time job…which I start next week! In this first job, I worked at a private club as an event manager where I managed all the special events. So in case you were wondering, the answer is yes…my life was very similar to Jennifer Lopez’s in The Wedding Planner. I ran around with a walkie talkie, was in charge of tearing grooms and their groomsmen away from the bar for the official wedding pictures, and then I went home late at night to eat frozen dinners by myself. But even though I worked crazy hours almost every day, my first full time job did bring me some great memories. I got to ride around on a golf cart on some of my summer nights, and I got to be part of some of the most beautifully decorated weddings and events I’ve ever seen. I got to build a haunted house for the children’s halloween party, in which my boss assured us that “if you made a child cry or wet themselves because the haunted house was too scary..it was ok…because really, that is the goal here.” And although I’m excited to start my job in catering sales next week, it will be sad to say goodbye to some of my coworkers that I ended up seeing a lot more than my family and friends over the last couple months. So as a “parting gift” I was convinced to bring in some cupcakes. And since I am never one to turn down a chance to test a new recipe, I gladly obliged. These cookie dough cupcakes feature a filling that is similar to my Cookie Dough Bites and a brown sugar buttercream frosting that has that unbaked cookie flavor that everyone loves.

Ingredients: Makes 24 cupcakes

Cupcakes:

  • 3 cups flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 1 cup milk
Cookie Dough “Filling”
  • 4 tablespoons butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup flour
  • 1/2 teaspoon vanilla extract
  • 1 1/2 tablespoons peanut butter
  • 1/4 cup mini chocolate chips
Brown Sugar Buttercream Frosting
  • 1/2 cup (1 stick) butter
  • 1 cup powdered sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
Preparation:
  1. For the cupcakes, sift flour,baking powder & salt together in a medium sized bowl
  2. In a large bowl, cream butter & sugar together, and stir in vanilla
  3. Alternate adding flour mixture & milk into the butter mixture and beat until well mixed
  4. Use an ice cream scoop to scoop batter into 24 cupcake liners
  5. Bake at 350 for 22 minutes
  6. For the filling, cream butter, sugars & peanut butter together in a small bowl
  7. Stir in flour, vanilla extract & chocolate chips until well mixed
  8. For the frosting, cream butter and sugars together in a large bowl until light & fluffy
  9. Stir in vanilla
  10. To assemble cupcakes, wait until they have cooled completely and then core out the center of the cupcake with a small knife
  1. Stuff the cookie dough filling inside the hole and pipe frosting on top with the use of a pastry tip and bag
