Oatmeal Cookie Pancakes

As a college student, I never quite kept the same schedule as my peers. Unlike everybody else, sleeping in late on the weekends was a rarity for me because I’ve always preferred my early morning routine. I always seemed to choose the allure of the beautiful campus and the sound of my feet on the pavement during a morning run over a few extra hours of sleep. After my run, I’d often have a long breakfast in the dining hall, even though my early timeline usually meant I would spend breakfast alone. Although I’ve always been blessed with close friends and a tight knit family, I did tend to spend a good amount of time on my own. Yet alone time was never something that bothered me. I’ve never been someone who needed the sound of idle chatter to keep me from boredom. And even though I ended up doing a lot of things by myself, I was always perfectly content. Alone, but never lonely. But a few years later I met someone who shared my love of early mornings and I realized something. Being independent and happy enough to enjoy alone time is great. But having someone to eat pancakes with is even better. After I met Eric, much of my quiet solitude turned into time spent together. Since he’s an early riser as well, there were a lot of days that he would come over to my apartment early in the morning so we could make breakfast together and we found we were quite the team. I’d make the batter…he’d flip the pancakes. And a new weekend routine was born. Because some things are just better when shared…and pancakes are one of them.

These pancakes are inspired by an oatmeal raisin pancake that they served in the dining hall back in college. The oats, cinnamon, brown sugar and raisins make this breakfast reminiscent of the classic oatmeal cookie. Dessert for breakfast? Perfection.

Ingredients: Makes 3-4 servings

  • 1 1/4 cup pancake mix (like Bisquick)
  • 2/3 cup rolled oats
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons canola oil
  • 1 egg
  • 2/3 cup skim milk
  • 1 teaspoon vanilla
  • 1/3 cup raisins
Preparation:
  1. In a large bowl combine baking mix, oats, brown sugar & cinnamon
  2. Add canola oil, egg, milk & vanilla and stir until well combined
  3. Stir in raisins
  4. Grease a skillet with baking spray and cook pancakes over medium heat
