Cinnamon Berry Granola

Trying unique dishes is one of  my favorite things to do but when it comes to my favorite food I keep it pretty simple. Cereal. I can eat cereal for every meal of the day and be perfectly happy. And yes, I realize that may be a little weird. I might have I gotten my cereal love from my mom who often made a meal out of cereal when she was on a strict single girl budget in her 20s. Economical and delicious. Way to go, Ma. Growing up she only let us have the healthier cereals like cheerios and raisin bran. The typical kid friendly fare of Lucky charms and Cocoa Puffs were only allowed when Mom was out of town and Dad was in charge of the grocery shopping. Basically because it was waaaay easier to sneak junk food into the cart when he was on watch. We were such rebellious little kids. My love for cereal grew even more in college when the dorm food left me with a buffet of cereal every night. It was delightful. Like my idea for a PB & J cafe, I also considered an all cereal restaurant… but alas Cereality is already in existence. Foiled again. But at least I have this Cinnamon Berry Granola to ease the blow. Crunchy, sweet & fruity…can’t get much better than that.

Ingredients:

  • 1 1/2 cups rolled oats
  • 1 1/2 cups wheat puffed cereal
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 6 tablespoons apple sauce
  • 1/2 tablespoon ground cinnamon
  • 1/2 cup dried berries
  • 1/2 cup chopped nuts
Preparation:
  1. Mix oats, cinnamon and cereal together in a large bowl
  2. In a smaller bowl mix maple syrup, vanilla & apple sauce together and pour over cereal mixture
  3. Bake at 325 for 30 minutes
  4. Stir granola around and mix in chopped nuts, bake for an additional 10 minutes
  5. Remove from oven and stir in dried berries ( I used pomegranate, cherries & cranberries)
