Chocolate Peanut Butter Bars

Some people show their affection by giving “just because” flowers. My boyfriend gives me “just because” cookbooks. I guess you can say the guy “gets” me. One of these sweet cookbooks is all brownie recipes and everything in it looks delicious. I’ve had it for months but hadn’t tried one of these delectable bars or brownies yet. Until today. My cousin, Lauren is having her second back surgery in the past 8 months today and I decided she’ll need a little baked good cheering up. Because as I have professed in the past, chocolate can cure anything. And if you add some peanut butter, you’ve got some serious healing going on. These bars are a bit crumbly when done, but the sweet & crunchy flavor will make you forget about the mess. And hopefully, in Lauren’s case, they will help her forget about her scoliosis. Feel better Lauren, and chow down!

Ingredients: Makes 24 bars

  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 2 sticks (8 oz) butter
  • 1 3/4 cup brown sugar
  • 2 cups rolled oats
  • 1/2 cup chopped mixed nuts
  • 10 oz milk chocolate chips
  • 1 egg, beaten
  • 14 oz can sweetened condensed milk
  • 1/3 cup crunchy peanut butter
Preparation:
  1. Sift flour and baking powder together in a large bowl
  2. Rub in butter until mixture resembles bread crumbs
  3. Stir in sugar, oats & chopped nuts
  4. Put a quarter of this mixture in a smaller bowl & add chocolate chips; set aside
  5. Stir the beaten egg into the large bowl of the mixture and press into a lightly greased 13 x 9 inch pan
  6. Bake the base in a 350 degree oven for 15 minutes
  7. Meanwhile, in a medium bowl stir sweetened condensed milk & peanut butter together
  8. After base is done baking, evenly pour milk & peanut butter mixture over it
  9. Cover with remaining chocolate & oat mixture and bake for an additional 25 minutes
