Maple Banana Bread

My mom was the youngest of 2 brothers, yet I still have 5 very special ladies that I call “the aunts.” My mom’s five best friends from high school have served as our extended family for as long as I can remember. And these 6 “sisters” always try to set aside a long weekend to get away to sit in the sun, listen to music and spend time together. And this weekend is what we call the “sister-aunt weekend.” My mom and her “sisters” will be going away for their vacation so I felt it was a must to send them on their way with some breakfast sweets. Seeing as the aunts are all very devoted Miss Petite Sweets readers and recipe is about time I made something sweet for all of them. Here we have a decadent yet healthy banana bread recipe that I have adapted from an old recipe in Cooking Light. It is inspired by the classic dessert Banana’s Foster, but because it is a lightened up version, there is no guilt. So chow down sister aunts, and have a great weekend!

Ingredients: Makes 1 loaf

  • 2 mashed bananas
  • 1 cup brown sugar
  • 2 teaspoons maple extract
  • 5 tablespoons butter
  • 2 eggs
  • 1/3 cup sour cream
  • 1 1/2 cups flour
  • 3/4 teaspoons baking powder
  • 2 teaspoons cinnamon
  1. Place mashed bananas, 1 cup brown sugar, maple extract & butter in a skillet over medium heat; cook until butter is melted and mixture bubbles; set aside and let cool
  2. Place banana mixture in a bowl and beat in eggs one at a time with an electric mixer
  3. Beat in sour cream
  4. In a separate bowl whisk flour, baking powder & cinnamon together
  5. Slowly add dry ingredients to wet ingredients and stir until well incorporated
  6. Bake at 350 for 50 minutes
