Cookie Dough Bites

My youngest cousin Meghan just graduated from high school. I remember when she was a tiny butter ball of a baby and her favorite pastime was eating everything in sight. We got along right from the start. Nowadays she is beautiful, hilarious 18 year old about to venture off to college in the fall. Yay Meg! And we still get along quite famously, seeing as we share a mutual affection for terrible Jesse McCartney songs and making weird faces at each other. Our boyfriends even have a budding bromance which means they enjoy teasing Meg & I together. It’s great. And by great I mean really annoying. For her graduation party I was asked to contribute a dessert, so I thought I’d make a “petite sweet”. I know… I’m sure you have all been waiting on bated breath for a petite sweet  from the petite baker to appear on this site. Well here it is! This recipe was inspired by Emily’s “cookie dough truffles” on her Sugar Plum Blog, one of my very favorite food blogs. They taste just like raw cookie dough, but don’t have raw eggs so they are totally safe! And who doesn’t like to chow down on cookie dough? Just admit it. We all do. So happy cookie dough eating my friends, and Happy Graduation Meghan!

Ingredients: Makes 44

  • 2 sticks unsalted butter, softened
  • 1 cup brown sugar
  • 2/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 4 tablespoons peanut butter
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 cups mini chocolate chips
  • 2 cups chocolate chips for melting
  1. Cream butter and sugars together
  2. Add vanilla & peanut butter and beat until well mixed
  3. Add salt & flour and stir until a thick dough forms
  4. Stir in chocolate chips
  5. Roll into 44 balls and set on a cookie sheet
  6. Put cookie dough balls into fridge for 2-3 hours or overnight
  7. Melt extra chocolate in the microwave or over a double boiler & drizzle over cookie dough balls
