Peanut Butter Chocolate Granola

Anyone who works in the food industry knows that you rarely have time to sit…or eat. You are usually running around like a crazy person and eating often doesn’t enter your mind until you are on your way home from work and realize that you are STARVING. But maybe that’s just me. When I was a culinary intern at a resort in Florida, I rarely had time to eat…and I came back home an even littler cook than I was before. I do not recommend this type of diet. Food is good, food is necessary, food is the reason for this blog. So since I’ve just started my first full time job, I’ve found some ways to battle this no-eating dilemma. Cliff bars, being the first. These delicious protein bars are quick and easy to eat on the go. My favorite is the Carrot Cake flavor. UUh-mazing. And my second favorite “food on the go” is homemade granola. Especially THIS homemade granola. How can you go wrong with peanut butter & chocolate? It’s crunchy and sweet and packs a lot of protein into a quick snack. And just a quick confession, I made variations of this recipe three times before it worked out. The key is to bake it at a low temperature for about 30 minutes, and to make sure you mix it around every 10 minutes so it doesn’t burn. I burned it the first 2 didn’t smell good in the house. But the third time is truly the charm because the result is an addicting, crunchy snack. Cheers!

Ingredients: Makes 1 cup

  • 1 cup rolled oats
  • 2 tbsp peanut butter
  • 1 tbsp honey
  • 1 tablespoon Nutella
  • 1 teaspoon vanilla
  • 2/3 cup raw almonds
  • 1/2 cup mini chocolate chips
  1. In a large bowl, mix honey, peanut butter & Nutella, and microwave for 20 seconds to soften peanut butter; stir in vanilla
  2. Stir in rolled oats until peanut butter mixture has coated the oats thoroughly
  3. Bake at 325 for 7 minutes
  4. Remove from oven and sprinkle almonds & chocolate chips over warm granola immediately
