Easy Apple Turnovers

Today I am graduating from college! I can’t believe the four years went by so fast. I feel like I was just a high school senior looking up my future dorm online and falling in love with the ivy covered walls. But here we all are, graduating and soon to be moving on to our next adventures. Yesterday we had a little brunch at our apartment, our beloved “Treehouse,” to celebrate…and we ate a ton, because that is what we do. Leona and I have lived in this apartment for two years and loved every minute of it. This is the place that we discovered the lyrical genius of pop sensations Jess McCartney and Usher…and went on to memorize their bumpin dance songs. This is the place that we cooked and baked roommate feasts, because that always felt like a better idea than studying. This is also the place that a certain guy asked “if I had a boyfriend..and if I wanted one..namely him.” Leaving college and the Treehouse behind is bittersweet. We’ve had so many good memories here and I couldn’t have asked for a better four years on such a beautiful campus. But there are a lot of exciting things to look forward to…like starting our first full time jobs in a few weeks. Which is weird, because my older brother keeps asking me if I’m excited to move on to the 6th grade. I think he’s having a hard time accepting the whole “little sister growing up thing” as well.

But back to brunch…because who doesn’t like brunch? Bobby Flay has devoted an entire TV show to brunch…so he’s ok in my book. I made apple turnovers that were easy to make and very delicious. And seeing as tomorrow is Mother’s Day, you have the perfect opportunity to make them. I saved some for my mom, because I think she is pretty darn cool. This recipe calls for frozen puff pastry dough because I’m just not that fancy. The pastry dough turns out golden and crisp and the apples inside are sweet and cinnamony. Yes I just made up another word…that college education has done me well.

Ingredients: 12 servings

  • 2 sheets frozen puff pastry (thawed)
  • 1-2 Braeburn apples
  • 2 tablespoons butter
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons water
  1. Peel apples and dice into bite size cubes
  2. Heat butter, sugar, cinnamon & nutmeg in a saucepan over medium high heat
  3. Add apples and salt and cook until apples are tender, set aside
  4. Roll out puff pastry and cut sheets into 4 inch squares (2″ by 2″)
5. Place apple filling in corner and fold puff pastry over, pinching edges with a fork
6. Brush pastry with egg, and place on greased cookie sheet
7. Bake at 350 for 25 minutes
8. Whisk glaze ingredients together and drizzle over turnovers once they have cooled
