Chocolate Banana Brownies

When moving, you’re faced with a couple dilemmas. One dilemma being how to pack all the random knick knacks you have accumulated over the years. For me, this includes a gnome figurine, a cupcake piggy bank and a Gilligan’s Island cookie jar. The cookie jar sings the theme song…and it’s awesome. Another dilemma is what to do with all the baking ingredients in the pantry. I don’t really plan on moving a pound of flour, sugar and butter with me, and throwing these ingredients away just ain’t right so…everything must go! I feel like the guy in the Sundance car dealership commercials. Why do they have to get rid of all those cars so quickly? And why are there always horses in those commercials? So many questions… ANYWAY I’m moving out of my wonderful apartment in 1 week and since the very thought of that task makes me sad, cleaning out the pantry by making brownies seemed both practical and necessary. And these chocolate banana brownies were the result . These brownies are chewy and fudgy and very very chocolatey. This makes sense seeing as there are 3 different sources of chocolate in these babies. And there is a subtle banana flavor as well, which is pretty delicious. Plus the added banana makes these brownies count as a serving of fruit. Right? Just say yes.

Ingredients: Makes 24 small brownies

  • 4 oz unsweetened baker’s chocolate
  • 8 tablespoons butter
  • 1 1/2 cups sugar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 large ripe banana, mashed
  • 1 egg
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon chili powder
  • 2 tablespoons cocoa powder
  • 2 tablespoons soy milk (regular milk work’s fine too!)
  • 2 tablespoons chocolate syrup
Preparation
  1. Place baker’s chocolate and butter in a double boiler and cook over medium high heat until melted. Cool slightly.
  2. Mix sugar, salt & vanilla in a large bowl
  3. Add chocolate mixture and mix well
  4. Add banana and egg and mix well
  5. In a separate bowl, mix all dry ingredients (flour through cocoa powder) until well incorporated
  6. Alternate adding dry ingredients and milk into the chocolate-butter mixture
  7. Stir in chocolate syrup
  8. Pour into a greased 13 x 9 inch pan
  9. Bake at 350 for 30-35 minutes
