Blueberry Streusel Muffins

When Eric and I first met, we went over the basic “getting to know you” stats. Number of siblings, favorite movie, music preferences, ect. And then there was one additional piece of information I knew he would need to know right off the bat. I get sick ALL the time. I eat healthy. I wash my hands. I exercise…Yet I still manage to get terrible head colds, fevers & ear infections…more often than the average gal. Eric and I started dating on a Friday. I was at home sick, with a fever by the following Monday morning. I clearly wasn’t kidding. That first time I got sick, he responded quickly with soup, cold medicine & cross word puzzles. And his wonderfully thoughtful “get well soon” methods have just gotten better and better. Last Monday I found myself with not one, but two ear infections and a terrible cold. Eric, being Eric, was over in about 10 minutes flat with juice, soup & a blueberry muffin. And it was delicious. So now that I’m feeling much better I decided to make some blueberry muffins of my own to share with my fantastic caregiver. I also got him some pizza…because there was this one time on Monday when I coughed in his face. I’m such a catch.

This muffins are very moist and have a sweet cinnamon flavor. And the blueberries look and taste so very pretty.

Ingredients: Makes 8 muffins

  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 2 mashed bananas
  • 1 tablespoon honey
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup canola oil
  • 1/2 cup soy milk
  • 3/4 cup blueberries
Streusel Topping:
  • 1/4 cup granola (I used honey flavored)
  • 3 tablespoons flour
  • 1 tablespoon cold butter, diced into pieces
  • 1/2 teaspoon cinnamon
1. Mix flour, baking powder & cinnamon together in a large bowl
2. In a smaller bowl, mash up ripe bananas and mix with honey
3. Add sugar and melted butter to banana mixture and stir well
4. Add banana mixture to dry ingredients
5. Add remaining ingredients (vanilla, oil & soy milk) and mix well
6. Stir in blueberries
7. Add streusel ingredients together in a separate bowl mix with a fork
8. Divide batter  into 10 cups in a muffin pan and sprinkle streusel topping over evenly
9. Bake at 350 for 20 minutes
