BBQ Pecan Crusted Salmon

Let me just say, I really love salmon. I love it’s texture and I love how many different ways you can prepare it. You can go traditional with lemon and herb sauce. You can go tropical with a mango red pepper relish. Or you can throw every food that is currently in your pantry into a food processor and hope it turns out to be delicious. This recipe is one of those beautiful experiments that just so happened to turn into one of my favorite recipes. It has a great balance of flavors with some sweetness from the bbq sauce and a little kick from the chili powder. And don’t even get me started on the texture…crunchy & nutty on the outside and super tender on the inside. I want some right now….is it acceptable to have two dinners? Thoughts?

Ingredients: 2 servings

  • 1 cup pecans
  • 1/4 cup brown sugar
  • 1 tablespoon chili powder
  • salt & pepper (to taste)
  • 1/2 cup barbeque sauce (I used Sweet Baby Ray’s)
  • 2 filets of salmon

  1. Grind the pecans, brown sugar, chili powder, and salt & pepper in a food processor until well ground
  2. Coat the salmon with the bbq mixture and then dredge the salmon in the pecan mixture
  3. Bake at 350 for 25 minutes
