Sugar Cake Cookies

Back in high school I learned that one of my friends had some serious food allergies… and I’m not just talking lactose intolerant. In addition to that he was allergic to peanuts,  soy products, legumes, mushrooms, and…brace yourself because it shocked me too..butter. Yes, my poor friend was unfortunate enough to be unable to eat the very life and soul of most delicious baked goods. It broke my heart. A life without baked goods is no life at all. Ok so maybe I’m being dramatic, but still…life without cookies surely lacks a lil luster. So I did some experimenting and somehow came up with this light fluffy cookie. It just so happened that the lack of butter made it a whole lot lower in calories too (shocking.) so this little tidbit attracted my healthy little mother and soon the cookies were requested weekly. And then my best friend/next door neighbor/cookie aficionado tasted these babies and got her whole family hooked. (She liked them even better when she became a “vegetarian with vegan aspiration” and deemed them a vegan food because they don’t have THAT many animal products. true dedication.) Anywho, these “Sugar Cake Cookies” are now known by all my family & friends as my signature cookie. Because you know, every person has a signature cookie. …Just me? Ok well looks like you all have some work to do…

These cookies have a light vanilla sugar cookie taste with a fluffy texture. I’ve used homemade buttercream and added different flavorings (lemon buttercream was a favorite) but I always get the best feedback when I’m lazy and use good ‘ol Betty Crocker vanilla frosting. Betty & I would have so much fun hanging out….

Ingredients: Makes 1 dozen

  • 2 eggs
  • ¾ cup sugar
  • ½ cup oil
  • ¼ cup pineapple juice
  • 1 tsp vanilla extract
  • 2 tsp. baking powder
  • 3 cups flour


  1. Preheat oven to 375.
  2. Combine eggs, sugar, oil, vanilla & juice in a food processor and mix.
  3. Add the baking powder
  4. Add flour 1 cup at a time. (The batter will be very sticky)
  5. Scoop batter into balls and bake for 9-11 minutes, until tops of the cookies are dry to the touch

Frost with the frosting of your choice & Enjoy
