This year, in addition to the millions of Christmas cookies I plan on baking, I’ve decided to add another, somewhat healthier edible treat to give away to friends and family. Homemade Pumpkin Cranberry Granola. It’s sweet and crunchy and a perfect seasonal treat. I like sprinkling it over Greek yogurt for breakfast, but it’s even great straight out of the jar as a quick snack. And the best part about this holiday treat is that it stores well in mason jars…making it a great holiday gift. I glued holiday fabric on the tops of each mason jar to make it extra festive. (I know. So Martha Stewart.) Of course, this is assuming I can actually get some of this granola into the jars…without eating it all myself. Wish me luck!
Ingredients:
- 2 tablespoons pumpkin puree
- 2 tablespoons honey
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla
- 1 cup oats
- 3 tablespoons chopped pecans or almonds
- 3 tablespoons dried cranberries
Preparation:
- Place pumpkin & honey in a bowl and microwave for 20 seconds
- Stir in pumpkin pie spice & vanilla
- Stir in oats & pecans or almonds until well coated with pumpkin mixture
- Spread out on a greased cookie sheet and bake for 7-9 minutes at 325
