I know, I know…I use this combination a lot. But who can blame me? It is delicious, and tropical and sweet. And I don’t really care if it is a Miss Petite Sweets mainstay. This sweet bread has coconut and lime juice baked right in it and also has those same magical ingredients drizzled over it in the form of a tropical glaze. And it isn’t too unhealthy so I declare it a breakfast item. That’s right. I declared it. So that makes it 100% legit. So please do enjoy this summery treat while you are safe inside an air conditioned home. Because if you live in the Midwest like me , you know that it is way way too hot & sticky to venture outside. I actually got sent home from work the other day for heat exhaustion. And no I’m not joking…not that this little anecdote should surprise anyone who knows how prone to random illnesses this little baker can be. So for the next couple days I plan on enjoying the summer inside with help from this tropical bread. Woohoo!
Ingredients: Makes 1 loaf
- 1 1/2 cups flour
- 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 2 eggs
- 2 tablespoons butter, softened
- 1/3 cup sour cream
- 1/4 cup milk
- zest from 1 lime
- 2 tablespoons fresh lime juice
- 1/2 cup shredded coconut
- 1 cup powdered sugar
- 3 tablespoons fresh lime juice
- Whisk together flour, baking powder & salt in a small bowl and set aside
- In a large bowl, mix sugar, butter, eggs, sour cream and milk together with an electric mixer
- Stir in lime zest, juice & coconut
- Gradually stir in flour mixture
- Bake at 350 for 1 hour
- Let cool & drizzle with glaze & toasted coconut

I haven’t tried coconut oil, but maybe i’ll try it!
