So I was home last weekend and happily planning a meal to cook for dinner. My brother was coming over that night and called during his lunch hour asking what he’d be eating in a few hours. Once he heard that vegetables were included he immediately objected. “That sounds a liiiittle too healthy..” And then I remembered, when cooking for the boys in this family they prefer little vegetables, lots of meat, and a little cheese thrown in for extra points. So I decided throwing a dessert into the mix would prevent a family dinner mutiny. These little mini pies are really easy to make but will surely please even the most health unconscious.
Ingredients:
- pre-made frozen pie crust, thawed
- 1/2 cup creamy peanut butter
- 1/2 cup mini chocolate chips
- powdered sugar and cocoa powder for dusting
Preparation:
Roll out the thawed pie crust and cut out circles. You can use a cookie cutter or be super crafty & professional and use the top of a drinking glass to make the circles. You can also cut out some little decorative hearts with a knife to top the pies.
Next, put a tablespoon of peanut butter and a tablespoon of mini chocolate chips in the center of a pie circle
Next, cover with another pie circle and press edges down with a fork. Finish by brushing with melted butter.
Bake at 350 for 12 minutes. Dust with powdered sugar or cocoa.
